Grease and line the base of a 23 x 12 cm/9 x 5 inch
loaf tin. Sift the flour, soda, cream of tartar and
salt into a bowl.
Rub in the fat until the mixture
resembles fine. breadcrumbs. Stir in the sugar. In
another bowl, mix the lemon juice and rind, milk,
bananas and eggs.
Stir the banana mixture into the
rubbed-in mixture. Turn into the prepared tin and
sprinkle with the granulated sugar.
Bake in a
preheated oven,
180°C
(350°F), Gas Mark 4, for 1 1/4hours or until a
skewer inserted in the centre comes out clean. Serve
the loaf sliced and buttered.
