Baking Recipes - Apple Tea Bread Recipe

Ingredients

Makes 1 large loaf

  • 50 g/2 oz butter or margarine, softened

  • 50 g/2 oz soft light brown sugar

  • 1 egg, beaten

  • 125 g/4 oz plain whole meal flour

  • 125 g/4 oz fresh whole meal breadcrumbs

  • 1 1/2teaspoons baking powder

  • 1/4 teaspoon ground cinnamon

  • 1/2 teaspoon ground mixed spice

  • 1/2 teaspoon grated nutmeg

  • 125 g/4 oz sultanas

  • 500 g/1 lb dessert apples, peeled, cored and sliced

  • 2 tablespoons apple juice


Method:

  1. Line and grease a 500 g/1 lb loaf tin. In a bowl, cream the butter or margarine and sugar until fluffy.

  2. Gradually beat in the egg. Fold in the flour, breadcrumbs, baking powder and spices.

  3. Stir in the sultanas, apple slices and apple juice. Press the mixture into the prepared tin.

  4. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 1 hour, or until firm and slightly risen. Cool on a wire rack.
