Baking Recipes - Baked Scones with Whipped Cream Recipe

Ingredients

Serves 10

  • 250 g/8 oz plain flour

  • 1 teaspoon cream of tartar

  • 1/2 teaspoon bicarbonate of soda

  • pinch of salt

  • 50 g/2 oz butter or margarine

  • 25 g/1 oz caster sugar

  • about 125 ml/4 fl oz milk, plus extra to glaze

To serve:

  • whipped cream

  • jam


Method:

  1. Sift the flour, cream of tartar, soda and salt into a mixing bowl and rub in the fat with your fingertips until the mixture resembles breadcrumbs.

  2. Stir in the sugar and add enough milk to mix to a soft dough. Turn out the dough on to a floured surface, knead lightly and roll out to 2 cm/3/4 inch thick. Cut into 5 cm/2 inch rounds.

  3. Place the rounds on a floured baking sheet and brush with milk. Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 10 minutes. Transfer to a wire rack to cool.

  4. Serve with whipped cream and jam.
