Baked Scones with
Whipped Cream Recipe
Ingredients

250 g/8 oz
plain
flour
1
teaspoon cream of tartar
1/2 teaspoon bicarbonate of soda
pinch of salt
50 g/2 oz
butter or margarine
25 g/1 oz
caster sugar
about 125
ml/4 fl oz milk, plus extra to glaze
To serve:
whipped cream
jam
Method:
Sift
the flour,
cream of
tartar,
soda and salt into a
mixing bowl and rub in the fat with your fingertips
until
the mixture resembles breadcrumbs.
Stir
in the sugar and add enough milk
to mix to a soft dough. Turn out the dough on to a
floured surface, knead lightly and roll out to 2
cm/3/4 inch thick. Cut into 5 cm/2 inch rounds.
Place the
rounds on a floured baking sheet and brush with milk.
Bake
in a preheated oven, 220°C
(425°F), Gas Mark 7, for 10 minutes. Transfer to a wire
rack to cool.
