Brandy Snaps Recipe

Method:

Put
the butter, sugar and syrup into a saucepan and heat
gently until the butter has melted and the sugar
dissolved. Cool slightly, then sift in the flour and
ginger and beat well.

Place teaspoonfuls of the mixture on a greased
baking sheet at least 10 cm/4 inches apart.

Bake in
a preheated oven, 180°C (350°F), Gas Mark 4, for
10-12 minutes. Leave to cool slightly then remove
with a palette knife and roll round the greased
handle of a wooden spoon.

Leave for 1-2 minutes to
set, then slip them off on to a wire rack to cool.
Serve plain or filled with whipped cream.
Note: The biscuits are
rolled
into their
distinctive tube shapes when they come out
of the oven. If the biscuits cool too much and
are too brittle to roll, return them to the oven for 1 minute to soften.
