Baking Recipes - Cherry Cake Recipe

Ingredients

Makes 1 cake

  • 175 g/6 oz butter or margarine

  • 175 g/6 oz caster sugar

  • 3 eggs

  • 300 g/10 oz self-raising flour, sifted

  • 250 g/8 oz glace cherries, halved

  • 50 g/2 oz ground almonds

  • about 5 tablespoons milk


Method:

  1. Line and grease a deep 18 cm/7 inch cake tin.

  2. Cream the fat and sugar until light and fluffy. Beat in the eggs, one at a time, adding a tablespoon of flour with the last two.

  3. Carefully fold in the remaining flour, then fold in the cherries, ground almonds and enough milk to give a dropping consistency.

  4. Put the mixture into the prepared tin and bake in a preheated oven, 160°C (325°F), Gas Mark 3, for 1 1/2-2 hours.

  5. Leave the cherry cake in the tin for 5 minutes, then turn on to a wire rack to cool.
