Baking Recipes - Chocolate Cup Cakes Recipe

Ingredients

Makes 20

  • 125 g/4 oz butter

  • 125 g/4 oz caster sugar

  • 2 eggs, beaten

  • 2 tablespoons cocoa powder

  • 2 tablespoons boiling water

  • 125 g/4 oz self-raising flour

Icing:

  • 125 g/4 oz plain dark chocolate, chopped

  • 50 g/2 oz butter


Method:

  1. Put paper cases into 20 bun tins. In a large bowl, beat the butter and sugar until pale and creamy. Gradually beat in the eggs.

  2. Mix the cocoa powder with the boiling water and fold into the creamed mixture with the flour.

  3. Divide the mixture among the paper cases and bake in a preheated oven, 190°C (375°F), Gas Mark 5, for 12-15 minutes. Transfer to a wire rack to cool.

  4. Melt the chocolate with the butter in a heatproof bowl set over a pan of gently simmering water.

  5. Stir, then spoon over the chocolate cakes and leave to set.
