Hot Apple Muffins Recipe

250 g/8 oz plain flour

1 teaspoon salt

1 tablespoon baking powder
-
50 g/2 oz caster sugar

2 eggs, beaten
-
150
ml/1/4
pint milk

50 g/2 oz butter, melted

250 g/8 oz cooking or dessert apples, peeled, cored
and
finely chopped
Method:

Grease
twenty-four 5 cm/2 inch bun or muffin tins.
Sift the flour, salt, baking powder and sugar
into a mixing bowl.

In a small bowl beat the
eggs with the milk and mix in the melted butter.
Stir the liquid quickly into the flour mixture.

Speed is essential once the liquid is added to
the baking powder, so do not beat the mixture or
bother about any lumps. Fold in the chopped
apples.

Spoon the mixture into the greased bun or muffin
tins so they are one-third full.

Bake in a
preheated oven,
220°C (425°F), Gas Mark
7, for
15-20
minutes or until the muffins are well risen and
golden brown. Turn out of the tins and serve
hot.
Note: These
American muffins are quite delicious split and
buttered for breakfast and are very quick and easy
to make. They are served hot and can be reheated on
a baking sheet covered loosely with foil in a hot
oven at 220°C (425°F), Gas Mark
7, for 5-6 minutes.
