Baking Recipes - Sesame Thins Recipe

Ingredients

Makes 20-24

  • 175 g/6 oz whole meal flour

  • 50 g/2 oz medium oatmeal

  • pinch of salt

  • 1 teaspoon baking powder

  • 75 g/3 oz butter or margarine

  • 1 tablespoon malt extract

  • 2 tablespoons milk

  • 25 g/1 oz sesame seeds


Method:

  1. Place the flour, oatmeal and salt in a mixing bowl, sift in the baking powder and mix well. Rub in the butter or margarine until the mixture resembles breadcrumbs.

  2. Whisk together the malt extract and milk until blended, then add to the dry ingredients with the sesame seeds. Mix to a firm dough.

  3. Turn the dough on to a floured surface and roll out thinly. Cut into 6 cm/2 1/2 inch rounds with a plain cutter.

  4. Place on a baking sheet and bake in a preheated oven, 190°C (375°F), Gas Mark 5, for 12-15 minutes, until golden. Transfer to a wire rack to cool.
