Christmas Recipes - Augratin Aubergine Recipe

Ingredients

• 2 medium sized zucchini or aubergine

• 2-4 tomatoes

• strong, aged cheese

Serves 8

Method:

1. Slice the aubergine or squash in 2-3 cm thick slices. Boil for 3 minutes.

2. Remove from water, drain and place them on an oven-safe form.

3. Place a tomato slice on each and cover with cheese.

4. Bake at 250C for 10 minutes.
