Method:

1. Peel the onion and stick the cloves into it.

2. Put the onion, bay leaf and milk in a pan and bring to the boil.

3. Remove the pan from the heat, cover with a lid and leave to infuse for 15 minutes.

4. Add the breadcrumbs and the butter.

5. Cook the sauce, uncovered over lowest possible heat for 15 minutes, then remove the onion and bay leaf.

6. Season to taste with salt and freshly ground black pepper.

7. Serve with chicken or turkey.
