Christmas Recipes - Currant/Walnut Loaf

Ingredients

250 g sifted
whole meal flour
-
50 g currants
-
2 tsp baking
powder
-
1/2 tsp bicarbonate
of soda
-
50 g chopped walnuts
-
5 cherries
-
10 flaked almonds
-
Pinch of All spice
-
250 gm demerara
sugar
-
7 eggs - separate white
from yolk
-
1 tbsp golden
syrup
-
Salt to taste
-
2 tsp vanilla
-
325 gm butter
-
2 tbsp sherry
-
1/2 metric cup mango juice
Serves 6-8
Method:
-
Sift salt, flour,
baking agents and spice together.
-
Cream butter with
sugar and golden syrup till light.
-
Add egg yolks
beating well into mixture, sprinkle 2 tbsp flour
from allowance onto egg mixture; slowly fold in the
flour, currants and walnuts.
-
Add the mango juice and
sherry.
-
Lastly fold in stiffly beaten egg white.
Pour into a well lined and greased loaf tin.
-
Decorate top of loaf with cherries.
-
Bake the middle
shelf of a preheated oven of 160C. Bake till firm.
