Christmas Recipes - Currant/Walnut Loaf Recipe

Ingredients

  • 250 g sifted whole meal flour

  • 50 g currants

  • 2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 50 g chopped walnuts

  • 5 cherries

  • 10 flaked almonds

  • Pinch of All spice

  • 250 gm demerara sugar

  • 7 eggs - separate white from yolk

  • 1 tbsp golden syrup

  • Salt to taste

  • 2 tsp vanilla

  • 325 gm butter

  • 2 tbsp sherry

  • 1/2 metric cup mango juice

Serves 6-8


Method:

  1. Sift salt, flour, baking agents and spice together.

  2. Cream butter with sugar and golden syrup till light.

  3. Add egg yolks beating well into mixture, sprinkle 2 tbsp flour from allowance onto egg mixture; slowly fold in the flour, currants and walnuts.

  4. Add the mango juice and sherry.

  5. Lastly fold in stiffly beaten egg white. Pour into a well lined and greased loaf tin.

  6. Decorate top of loaf with cherries.

  7. Bake the middle shelf of a preheated oven of 160C. Bake till firm.
