Ingredients
Serves 4-5
Method:
-
Grate or grind the marzipan with a food mixer. Add
lemon rind, finely grated, and the flour to the
blender and
blend till well mixed.

Reserve
a little egg white and add the rest to the mixture,
blend till smooth.

Cover a baking sheet
with the rice paper and spread out the mixture with
a palette knife.
-
Adjust edges to
make them even. Brush with 1
egg white and then cut into 8 or 16 triangles.
-
Push
the cakes away from each other and with a teaspoon,
make an indentation into each cake and spoon in the
jam.
-
Sprinkle some flaked almonds over. Bake until
golden in color.
