Christmas Recipes - Meat Pate with Cumberland Sauce Recipe

Ingredients

  • 1/2 kg coarsely minced beef

  • 1/2 kg coarsely minced pork meat

  • 1/2 kg beef liver in slices

  • 2 tbsp margarine

  • 2 finely chopped yellow onions

  • 200 g mushrooms

  • 1 tin green olive of about 140 g

  • 3 tsp salt

  • 1 1/2 tsp black pepper

  • 1 egg

  • 1/2-1 deciliter single cream

Serves 6-8


Method:

  1. Set the oven to 175C.

  2. Fry the liver slices on low heat in the margarine. Brown the onion and let it cool.

  3. Cut the liver in small cubes and the olives and mushrooms in slices.

  4. Work together the minced meat with salt and pepper. Add the egg and the cream. Work the forcemeat that shall be pretty firm in consistency.

  5. Add liver, onion, mushrooms and olives. Fry a test sample and taste.

  6. Pack the farce well in a rectangular mould, holding 2 liters, flatten the top and cover with allumimium foil.

  7. Bake in the oven for about 2 hours and serve.
