Christmas Recipes - Olive and Garlic Filled Pork Loin Recipe

Ingredients

  • 1 1/2 kg boneless pork loin

  • 10-15 olives, green

  • 2 garlic cloves

  • 2 tbsp oil

  • 2 tbsp soy sauce

  • 1 tsp black pepper

Serves 8


Method:

  1. Preheat oven to 175C.

  2. Make 2-3 holes through the length of the roast. Push olives into these holes until they are filled. Peel and sliver the garlic cloves. Push these slivers into the roast at different places.

  3. Tie the meat together to help it keep it's form better. Mix together the oil, soy sauce and black pepper. Roll the meat in this mixture.

  4. Place the meat in a baking pan. Stick a meat thermometer in the thickest part and bake for 1 1/2 hours or until the thermometer shows 80- 85C.

  5. Remove from oven and let stand for 10 minutes before slicing. Serve with egg noodles and augratine aubergine.
