Christmas Recipes - Raisin Cakes Recipe

Ingredients

  • 125 g butter

  • 2 eggs

  • 1 1/2 dl raisins

  • 2 dl icing sugar

  • 2 dl plain flour

  • 3 tbsp brandy

Serves 4-5


Method:

  1. Chop the raisins coarsely and place them in the alcohol.

  2. Beat butter and icing sugar until light and then add the eggs one at a time.

  3. Sift the flour over and mix well before adding the raisins (with or without the brandy).

  4. Spoon out the rather loose dough onto baking sheets covered with baking paper, allowing plenty of room between each cake.

  5. Bake at 200 degrees C for 8-10 minutes.

  6. Remove the cakes with a sharp knife. Store in a covered tin.
