Christmas Recipes - Roast Turkey/Chicken Recipe

Ingredients

  • Turkey

  • 6 slices of fat bacon

Chestnut Stuffing:

  • 450 g of chestnuts

  • 1 cup of stock (can be made with a chicken cube)

  • 60 g chopped bacon

  • 90 g brown fresh breadcrumbs

  • 1 tsp chopped parsley

  • 30 g of butter

  • 1 egg

  • grated rind of 1/2 lemon

  • salt and pepper

Serves 4-5


Method:

  1. Slit the chestnut skins and boil in water for 10 to 15 minutes.

  2. Place in a saucepan with stock and simmer until tender. Mash well.

  3. Beat together with chopped bacon, breadcrumbs, parsley, lemon rind and butter.

  4. Season with salt and pepper. Bind with beaten egg. Stuff the turkey.

  5. Left over stuffing can be made into small balls and roasted with the bird.

  6. Cover turkey breast with bacon and roast in a moderately hot oven for about three hours for a 12 pound bird.

  7. When the breast is brown, cover with baking foil.

  8. Serve the turkey with sausages, bacon rolls, gravy and bread sauce.
