Sift flour with salt and soda. Cream butter with
sugar till light. Add egg yolks beating in and
adding 2 tbsp flour from given amount into mixture
to prevent mixture from curdling.
Gently fold in
flour. Blend well. Add milk, essence, orange juice,
brandy and ground almonds.
Beat egg white stiffly,
then fold into mixture. Line a 900 gm loaf pan with
grease-proof paper.
Grease lightly with butter. Pour
cake batter into pan. Decorate top of loaf. (with
flaked almonds).
Bake till firm. Temperature 160C.
Remove loaf and place on rack to cool before
slicing.
