Christmas Recipes - Walnut and Blueberry Recipe

Ingredients

For the filling:

  • 150 gm chopped walnuts

  • 350 gm strained canned blueberries

  • 100 gm soft brown sugar

  • Pinch of cinnamon powder

  • 2 tbsp arrowroot flour (available in packets from Supermarkets)

For the Short Crust Pastry:

  • 600 gm plain sifted flour

  • Pinch of salt

  • 400 gm margarine

  • Little iced water

Serves 6-8


Method:

  1. Sift salt into flour. Rub chilled margarine into flour until mixture resembles breadcrumbs.

  2. Add enough cold water to form a stiff dough. Roll dough 2 cm thick to fit base and sides of a round dish.

  3. Press down a little to fit, Cook filling in a saucepan till sticky but not dry. Cool. Pour filling into pastry in dish.

  4. Roll out the remaining pastry to form the top layer. Cover the fruit. Press down pastry around dish to secure open edges.

  5. Slit the middle of pastry for steam to escape. Brush egg yolk all over pastry.

  6. Bake in preheated oven at 140C till golden. Cool well before cutting.
