Desserts Recipes - Almond Fruit Salad Recipe

Ingredients

Serves 4-6

  • 4 dessert apples, cored

  • 4 peaches, skinned and stoned

  • 125 g/4 oz strawberries

  • 4 slices of pineapple

  • 125 g/4 oz lychees, skinned and stoned 

Almond syrup:

  • 2 tablespoons ground almonds

  • 450 ml/3/4 pint water

  • 1 tablespoon corn flour, blended with 2 tablespoons water

  • 3 tablespoons sugar


Method:

  1. First make the syrup. Put the almonds, water, blended corn flour and sugar in a pan and mix well.

  2. Gradually bring to the boil, stirring, then simmer for 10 minutes, stirring constantly.

  3. Remove from the heat and leave to cool, stirring occasionally to prevent a skin forming.

  4. Slice the apples, peaches and strawberries; cut the pineapple into cubes. Put all the fruit in a bowl and mix well.

  5. Spoon over the almond syrup and chill before serving.
