Ingredients

Serves 4

  • 15 g/1/2 oz butter, plus extra for greasing

  • 25 g/1 oz plain flour, plus extra for dusting

  • 200 ml/7 fl oz milk

  • 75 g/3 oz ground almonds

  • 3 eggs, separated

  • 25 g/1 oz caster sugar

  • 75 ml/3 fl oz Amareno di Saronno liqueur

  • 4 amareni biscuits, crushed

  • icing sugar, to serve


Method:

  1. Butter 4 small soufflé dishes and dust with flour. Melt the butter in a small saucepan, add the flour and stir to a smooth paste.

  2. Slowly pour in the milk, stirring constantly, to make a smooth sauce. Add the ground almonds and egg yolks; mix well and rapidly. Do not leave the pan on the heat. Add the sugar and Amaretto and mix well.

  3. Quickly whisk the egg whites until stiff. Fold in the almond sauce, then quickly fold in the crushed biscuits.

  4. Divide the mixture between the prepared soufflé dishes and cook in a preheated oven, 220°C (425°F), Gas Mark 7, for about 12 minutes until risen and golden. Dust with icing sugar and serve immediately.
