Desserts Recipes - Apple and Walnut Whirls Recipe

Ingredients

Serves 10

  • 75 g/3 oz butter

  • 50 g/2 oz soft brown sugar

  • 125 g/4 oz plain flour, sifted

  • 75 g/3 oz ground walnuts chopped walnuts, to decorate

Filling:

  • 1 tablespoon apricot jam

  • 500 g/1 lb dessert apples, peeled, cored and sliced

  • 1/2 teaspoon ground cinnamon

  • 250 ml/8 fl oz double cream, whipped


Method:

  1. Cream the butter and sugar together until light and fluffy. Stir in the sifted flour and ground walnuts and mix to a firm dough using your hand.

  2. Turn on to a floured surface and knead lightly until smooth. Roll the dough out thinly; cut out ten 7.5 cm/3 inch and ten 5 cm/2 inch circles.

  3. Place on a greased baking sheet and bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 12-15 minutes, until golden. Transfer to a wire rack to cool.

  4. To make the filling, put the apricot jam and apples into a saucepan, cover and cook gently for 15-20 minutes, until softened. Add the cinnamon and leave to cool.

  5. Spread the cooled apple mixture over the larger rounds, pipe two-thirds of the cream over the apple and top with the small rounds. Decorate with the remaining cream and the chopped walnuts.
