Banana Rum
Fritters Recipe

4 large, ripe
bananas
25 g/1 oz sugar
5 tablespoons dark
rum oil, for deep-frying
Batter:
75 g/3 oz plain flour
pinch of
salt
1 tablespoon olive
oil
150 ml/1/4 pint water
2 egg whites
To
serve:
vanilla
sugar
ground cinnamon
Method:
Peel
the bananas and
cut them diagonally into slices about 1 cm/1/2
inch thick. Place them in a shallow dish and sprinkle
with the sugar. Pour the rum over the top and set aside
for 1 1/2 hours, turning from time to time.
Meanwhile, make the batter. Sift the flour and salt into
a bowl. Make a well in the centre and gradually mix in
the oil and water. Mix to a smooth batter and leave to
stand for 1 hour.
Just before the batter is needed, beat
the egg whites stiffly and then lightly fold them into
the batter. Drain the banana slices and dip them into
the batter so that they completely coated.
Heat
the oil for deep-frying to
180-190°C (35O-375°F) or
until a cube of bread browns in 30 seconds. Fry the
banana pieces, a few at a time, until golden brown on
both sides.
Drain on absorbent kitchen paper. Serve the
fritters really hot, sprinkled with vanilla sugar and
cinnamon.
