Desserts Recipes - Bananas in Coconut Milk Recipe

Ingredients

Serves 2

  • 1 large or 2 small bananas

  • 200 ml/7 fl oz coconut milk

  • 100 ml/3 1/2 fl oz water

  • 3 tablespoons palm sugar or light muscovado sugar


Method:

  1. Peel the bananas and halve lengthways. Cut each half into 4 pieces.

  2. Put the coconut milk, water and sugar into a saucepan and simmer, stirring occasionally, for about 6 minutes.

  3. Add the bananas and cook for 4 minutes until heated through. Serve hot.
