Butterscotch Flan Recipe

175 g/6 oz plain flour

75 g/3 oz butter, cut into small pieces

25 g/1 oz caster sugar
-
1-2 tablespoons water
-
whipped cream, to decorate
Filling:
-
125 g/4 oz dark soft brown sugar
-
40 g/1 1/2 oz butter
-
40 g/1 1/2 oz plain flour, sifted

ml/1/2 pint milk

150 ml/1/4 pint single
cream
Method:

Sift
the flour into a bowl, add the butter and rub in until
the mixture resembles breadcrumbs. Stir in the sugar
with enough water to mix to a firm dough; knead lightly.

Roll out the pastry on a floured surface and use to line
a 23 cm/9 inch fluted flan dish. Prick the base and
chill for 30 minutes.

Line the
pastry case with nonstick baking paper and
baking beans and bake 'blind' in a
preheated oven, 190°C (375°F), Gas Mark 5, for 15
minutes.

Remove the paper and beans and cook for 5-10
minutes, until firm. Leave to cool.

Next prepare
the filling. Place the sugar, butter, flour,
milk and cream in a saucepan, bring to the boil,
whisking, then
cook gently for 1 minute.

Pour into the pastry case and chill until set. Decorate with cream.
