Ingredients

Serves 6

  • 175 g/6 oz plain flour

  • 75 g/3 oz butter, cut into small pieces

  • 25 g/1 oz caster sugar

  • 1-2 tablespoons water

  • whipped cream, to decorate 

Filling:

  • 125 g/4 oz dark soft brown sugar

  • 40 g/1 1/2 oz butter

  • 40 g/1 1/2 oz plain flour, sifted

  • 300 ml/1/2 pint milk

  • 150 ml/1/4 pint single cream


Method:

  1. Sift the flour into a bowl, add the butter and rub in until the mixture resembles breadcrumbs. Stir in the sugar with enough water to mix to a firm dough; knead lightly.

  2. Roll out the pastry on a floured surface and use to line a 23 cm/9 inch fluted flan dish. Prick the base and chill for 30 minutes.

  3. Line the pastry case with nonstick baking paper and baking beans and bake 'blind' in a preheated oven, 190°C (375°F), Gas Mark 5, for 15 minutes.

  4. Remove the paper and beans and cook for 5-10 minutes, until firm. Leave to cool.

  5. Next prepare the filling. Place the sugar, butter, flour, milk and cream in a saucepan, bring to the boil, whisking, then cook gently for 1 minute.

  6. Pour into the pastry case and chill until set. Decorate with cream.
