Desserts Recipes - Coffee Parfait Recipe

Ingredients

Serves 6

  • 1 tablespoon instant coffee powder

  • 1 teaspoon drinking chocolate powder

  • 2 teaspoons boiling water

  • 1/2 teaspoon vanilla extract

  • 300 ml/1/2 pint whipping cream

  • 2 egg whites

  • 50 g/2 oz caster sugar

  • 40 g/1 1/2 oz plain dark chocolate, grated fan wafers, to serve


Method:

  1. Dissolve the coffee and drinking chocolate in the boiling water in a cup or mug then leave to cool. Add the vanilla extract.

  2. Whisk the cream in a bowl until stiff, then fold in the coffee and chocolate mixture, using a metal spoon.

  3. Whisk the egg whites in a grease-free bowl until stiff peaks form, then gradually add the sugar, whisking well after each addition until very stiff and glossy.

  4. Lightly fold the egg whites and two-thirds of the grated chocolate into the cream mixture, using a metal spoon.

  5. Spoon the mixture into 6 individual serving dishes, sprinkle with the remaining grated chocolate and serve chilled, with fan wafers.
