Desserts Recipes - Creamy Coffee Chocolate Pots Recipe

Ingredients

Serves 8

  • 175 g/6 oz plain dark chocolate, chopped

  • 250 ml/8 fl oz strong espresso coffee

  • 2 tablespoons whisky

  • 50 g/2 oz sugar

  • 6 egg yolks

  • 50 ml/2 fl oz double cream

  • grated nutmeg


Method:

  1. Place the chocolate in a small pan with the coffee and whisky, and heat gently until the chocolate has melted. Add the sugar and stir until dissolved.

  2. Remove the pan from the heat. Immediately beat in the egg yolks until thickened.

  3. Pour through a fine sieve into 8 small espresso cups or ramekins. Cool and chill for 4 hours or overnight, until set.

  4. Whip the cream until it just holds its shape and spoon a little on to each chocolate pot. Sprinkle with nutmeg.

  5. Pour a small amount of boiling water into a roasting dish to a depth of about 1 cm/1/2 inch.

  6. Sit the chocolate pots in the boiling water for 1 minute, then remove and serve immediately.
