Ingredients

Serves 6

  • 125 g/4 oz butter

  • 2 tablespoons golden syrup

  • 300 g/10 oz digestive biscuits, finely crushed

  • 350 g/12 oz yellow plums, stoned and sliced

  • 50 g/2 oz ratafia biscuits, crushed

  • 65 g/2 1/2 oz caster sugar

  • 250 g/8 oz cottage cheese, sieved

  • 250 g/8 oz cream cheese

  • 150 ml/1/4 pint soured cream

To decorate:

  • ratafia biscuits

  • whipped cream


Method:

  1. Place the butter and syrup in a pan and heat gently until melted. Stir in the biscuit crumbs and spread over the base and up the side of a 23 cm/9 inch loose­ bottomed cake tin.

  2. Arrange the plums on the biscuit base and sprinkle with the ratafia crumbs and 15 g/1/2 oz of the sugar.

  3. Beat together the cheeses, soured cream and the remaining sugar until well blended, then pour the mixture over the plums.

  4. Bake the cheesecake in a preheated oven, 150°C (300°F), Gas Mark 2, for 1 hour. Turn off the heat and leave it in the oven until cool. Chill overnight or for several hours.

  5. Carefully transfer the cheesecake to a serving plate and decorate with ratafia biscuits and piped cream.
