Cheesecake Recipe

125 g/4 oz butter
2 tablespoons golden syrup
300 g/10 oz digestive biscuits, finely crushed
350
g/12 oz yellow plums, stoned and sliced
50 g/2 oz ratafia biscuits, crushed
65 g/2 1/2 oz caster sugar
250 g/8 oz cottage cheese, sieved
250 g/8 oz cream cheese
150 ml/1/4 pint soured cream
To
decorate:
ratafia biscuits
whipped cream
Method:
Place
the butter and syrup in a pan and heat gently until
melted. Stir in the biscuit crumbs and spread over the
base and up the side of a 23 cm/9 inch loose bottomed
cake tin.
Arrange the plums on the biscuit base and sprinkle with
the ratafia crumbs and 15 g/1/2 oz of the sugar.
Beat together the cheeses, soured cream and the
remaining sugar until well blended, then pour the
mixture over the plums.
Bake the cheesecake in a
preheated oven, 150°C (300°F), Gas Mark 2, for 1 hour.
Turn off the heat
and leave it in the oven until
cool.
Chill overnight or for
several hours.
Carefully transfer the cheesecake to a
serving plate and decorate with ratafia biscuits and
piped cream.
