Gooseberry Fool Recipe

500 g/1 lb
gooseberries, topped and tailed

150 g/5 oz caster
sugar

2 elderflower
heads, tied in muslin (optional)

250 ml/8 fl oz
whipping cream, whipped

a few drops of
green food coloring (optional)

biscuits, to serve
Method:

Place
the gooseberries in a pan with the sugar and
elderflowers, if using. Cover and cook for
10-15
minutes until tender.

Remove the elderflowers and leave
to cool. Rub through a sieve or work in a blender until
smooth. Fold
the cream and coloring, if using, into the fruit mixture.

Spoon into individual dishes and chill before serving
with biscuits.
Note:
The flavors of gooseberries and elderflowers
combine beautifully in desserts. If you do not have
any elderflowers, try using a little elderflower
cordial instead: add
1-2 teaspoons to the gooseberries and sugar as
they cook.
