Desserts Recipes - Lemon Syllabub Recipe

Ingredients

Serves 4

  • grated rind and juice of 1 lemon

  • 125 ml/4 fl oz white wine

  • 75 g/3 oz caster sugar

  • 300 ml/1/2 pint double cream

  • 1 egg white

  • biscuits, to serve


Method:

  1. Place the lemon rind and juice in a bowl with the white wine and half of the sugar. Cover and leave to soak for about 1 hour.

  2. Whip the cream until it stands in peaks, then gradually add the wine mixture and continue whipping until it holds its shape.

  3. Whisk the egg white until stiff then whisk in the remaining sugar. Carefully fold into the cream mixture.

  4. Spoon into 4 glasses and serve with biscuits.
