Ingredients

Serves 6

  • 2 mangoes

  • 75 g/3 oz icing sugar, sifted

  • 2 tablespoons lime or lemon juice

  • 2 teaspoons gelatine, soaked in 2 tablespoons cold water

  • 300 ml/1/2 pint double cream, whipped

  • lime or lemon twists, to decorate


Method:

  1. Cut the mangoes in half lengthways, scrape out the flesh and place in a food processor or blender.

  2. Add the icing sugar and lime or lemon juice and puree until smooth.

  3. Alternatively, work the mangoes through a sieve, then stir in the juice and sugar.

  4. Heat the gelatine gently until dissolved. Cool slightly, then mix into the mango puree with the whipped cream. Pour into individual glass bowls and leave to set.

  5. To serve, decorate with lime or lemon twists.
