Desserts Recipes - Melon and Raspberries in Sauternes Recipe

Ingredients

Serves 4

  • 1 small ripe Galia melon

  • 175 g/6 oz raspberries

  • 1/2 bottle Sauternes, chilled


Method:

  1. Halve the melon and either scoop out small balls using a melon bailer or a teaspoon or cut the flesh into small cubes.

  2. Divide the melon and raspberries equally among 4 glass dishes. Pour over any melon juice, cover and chill in the refrigerator for at least 2 hours.

  3. Just before serving, pour some of the chilled Sauternes into each dish to almost cover the fruit. Serve at once.
