Ingredients

Makes 20

  • 3 egg whites

  • 175 g/6 oz golden caster sugar

  • 1 tablespoon instant coffee powder

  • 150 ml/1/4 pint double cream

  • 1 teaspoon vanilla extract


Method:

  1. Whisk the egg whites until they are stiff, but not dry. Gradually whisk in the sugar and coffee powder, until stiff and glossy.

  2. Spoon or pipe small mounds of meringue on to baking sheets lined with baking parchment.

  3. Bake in a preheated oven, 110°C (225°F), Gas Mark 1/4, for 2-2 1/2 hours, or until the meringues are crisp and dry. Leave to cool.

  4. Whisk the cream with the vanilla extract until it just holds its shape. Stick pairs of meringues together with a little flavored cream and serve.
