Moroccan Rice
Pudding Recipe

about 1 liter/1
3/4 pints milk
50 g/2 oz short-grain pudding rice, rinsed and drained
50 g/2 oz sugar
1-1 1/2 tablespoons orange flower
water
To decorate:
chopped pistachio nuts
chopped almonds
crystallized violets or rose petals
Method:
Heat
the milk
in a heavy, nonstick saucepan. Sprinkle over the
rice and bring to the boil, stirring.
Lower the heat
and cook very gently, stirring occasionally, until
the pudding is thick, velvety and falls easily from
the spoon. This may take anything up to about 2
hours.
Use a heat
diffusing mat, if necessary, to
prevent the rice cooking too quickly and sticking to
the pan.
When the rice pudding is cooked, stir in
the sugar and the orange flower water, to taste.
Pour into a serving dish or into individual dishes.
Serve warm or cold with pistachio nuts, almonds and
crystallized violets or rose petals scattered over
the top.
