Traditional Rice
Pudding Scented with Rosewater Recipe
Ingredients

75 g/3 oz pudding rice

125 g/4 oz sugar

1/2
teaspoon ground nutmeg

1/4 teaspoon ground coriander

1/2
teaspoon salt

2 tablespoons
grated suet

600 ml/1 pint milk

4
egg yolks, plus 1
egg white

4
tablespoons fresh white breadcrumbs

2 tablespoons
rosewater
-
lemon peel slivers, to decorate (optional)

brown
sugar, to serve
Method:

Combine the rice,
sugar,
spices,
salt,
suet and milk in a
saucepan.
Cook over low heat,
stirring
occasionally, for about
30 minutes, or until
the mixture is thick
and creamy.

Beat in the egg yolks and the egg white,
the breadcrumbs and rosewater
until thoroughly blended.

Serve warm,
sprinkled with brown sugar and decorated
with slivers of lemon peel, if using.
Note: A
good rice pudding is a true delicacy, so
