Chicken Skewers
with Thai Sweet Dip Recipe
Ingredients
Serves

2 teaspoons
sesame seeds
3 boneless,
skinless chicken breasts
4 tablespoons
sesame oil
Dip:
2.5 cm/1
inch piece of galangal, peeled and finely chopped
1 garlic
clove, crushed
1 small red
chili, deseeded and finely chopped
125 ml/4
fl oz dark soy sauce
1
tablespoon Thai basil, finely chopped, plus
extra to
garnish
Method:
Toast the sesame seeds in a dry frying pan,
stirring continuously, until golden.
Cut the
chicken into fine strips and thread on to 8
wooden skewers which have been soaked in
water for 20 minutes.
Drizzle with sesame
oil and sprinkle with sesame seeds. Cook
under a preheated hot grill for 15 minutes,
turning the skewers frequently and brushing
with more oil.
While the chicken is cooking,
stir together all the ingredients for the
dip. Spoon the dip into a small bowl.
Serve
the hot chicken kebabs with the dip. Garnish
with Thai basil.
