30 square wonton wrappers
egg yolk, to seal
groundnut oil, for deep-frying
plum sauce,
to serve
Filling:
3 tablespoons groundnut oil
2 garlic cloves, chopped
3 baby corns, very finely sliced
5 fresh shiitake mushrooms, finely chopped
25 g/1
oz green beans, very finely sliced
1/2 onion, finely chopped
1 egg
1/2 teaspoon sugar
1 tablespoon soy sauce
salt and pepper
Method:
First make
the filling. Heat two-thirds of the oil in a
wok, add the garlic and give it a stir, then
add the corn, mushrooms, beans and onion
and stir-fry for 1-2 minutes.
Push the
vegetables to one side of the wok, pour in
the remaining oil and break the egg into it.
Break the yolk and stir it around for about 1 minute, gradually mixing in
the vegetables, Add the sugar and
soy sauce, season to taste with salt and
pepper and mix well. Remove the pan from the
heat and set the mixture aside in a bowl.
Put a spoonful of the filling in the centre
of a wonton wrapper. Fold the wrapper over
to make a triangle, then seal the edges with
a little egg yolk. Repeat with the remaining
wrappers and filling.
Heat the oil for
deep-frying in a wok, pop in a batch of
wontons and cook over a moderate heat for
3-4 minutes until golden brown on all sides.
Remove from the oil with a slotted spoon and
drain on kitchen paper. Repeat the frying
process with the remaining wontons. Serve
hot, with plum sauce for dipping.
