Drinks and Finger Food Recipes - Guacamole Recipe

Ingredients

Serves 6

  • 2 large ripe avocados

  • 3 tablespoons lemon or lime juice

  • 2 garlic cloves, crushed

  • 40 g/1 1/2 oz spring onions, chopped

  • 1-2 tablespoons chopped mild green chilies

  • 2 tablespoons chopped coriander leaves

  • 125 g/4 oz tomatoes, skinned, deseeded and chopped

  • salt and pepper

  • tortilla chips, to serve


Method:

  1. Cut the avocados in half and remove the stones. Scoop the flesh into a mixing bowl, add the lemon or lime juice and mash coarsely.

  2. Add the garlic, spring onions, chilies and coriander and season to taste with salt and pepper. Mix in the chopped tomatoes.

  3. Cover the bowl and place in the refrigerator for at least 1 hour. Serve the guacamole with tortilla chips, to dip.
