Drinks and Finger Food Recipes - Lamb and Courgette Koftas Recipe

Ingredients

Serves 6

  • 2 courgettes, finely grated

  • 2 tablespoons sesame seeds

  • 250 g/8 oz minced lamb

  • 2 spring onions, finely chopped

  • 1 garlic clove, crushed

  • 1 tablespoon chopped mint

  • 1/2 teaspoon ground mixed spice

  • 2 tablespoons dried breadcrumbs

  • 1 egg, lightly beaten

  • salt and pepper

  • vegetable oil, for shallow-frying

  • lemon wedges, to garnish


Method:

  1. Place the courgettes in a sieve and press down to extract as much liquid as possible. Place in a bowl.

  2. Dry­fry the sesame seeds in a frying pan for 1-2 minutes until they are golden and release their aroma.

  3. Add to the courgettes together with the lamb and all the remaining ingredients except the oil and lemon. Season liberally with salt and pepper.

  4. Form the mixture into 20 small balls and shallow-fry in batches for 5 minutes, turning frequently until evenly browned.

  5. Keep the koftas warm in a hot oven while cooking the rest. Serve hot, garnished with the lemon wedges.
