250 g/8 oz large green olives

2 garlic cloves, sliced

grated rind of
1/2 lemon

1 tablespoon balsamic vinegar

1/2 teaspoon
chili flakes

4 tablespoons extra virgin olive oil
Method:

Place the olives in a bowl, add all the
remaining ingredients and stir well.

If you
are not serving the olives immediately, they
may be kept, covered, in the refrigerator
for up to 3 days.
