Ingredients

Serves 1

• 2 measures gin

• 1 1/2 measures double cream

• 1 tablespoon egg white

• 1 tablespoon lemon juice

• 1 tablespoon caster sugar

• 3 dashes of orange flower water

• crushed ice

• 2 measures soda water

• fresh fruit, to decorate

Method:

1. Combine the gin, cream, egg white, lemon juice, sugar and orange flower water in a blender with some crushed ice. Blend for about 10 seconds.

2. Add the soda water and blend again, then strain into a tall glass. Decorate with fresh fruit.
