Drinks and Finger Food Recipes - Potatoes Wrapped in Parma Ham Recipe

Ingredients

Serves 4

  • 12 small new potatoes, boiled

  • 12 very thin slices of Parma ham

  • 2 tablespoons olive oil

  • sea salt


Method:

  1. Roll each potato in a slice of Parma ham, patting with your hands to mould the ham to the shape of the potato.

  2. Lightly oil a roasting tin, add the potatoes and cook in a preheated oven, 200°C (400°F), Gas Mark 6, for 20 minutes.

  3. Keep an eye on the potatoes while they are cooking as they may need turning, or moving around; often the ones on the edge get more color than the ones in the middle.

  4. Serve the potatoes sprinkled with sea salt.
