Drinks and Finger Food Recipes - Quick Curried Nuts Recipe

Ingredients

Serves 15

  • 40 g/1 1/2 oz butter or sunflower oil

  • 1 tablespoon curry powder

  • 500 g/1 lb mixed skinned nuts, such as almonds, brazils, walnuts, pecans and hazelnuts

  • 1 teaspoon salt


Method:

  1. Melt the butter in a roasting tin and stir in the curry powder. Cook, stirring, for 30 seconds. Add the nuts and stir until well coated.

  2. Roast in a preheated oven, 150°C (300°F), Gas Mark 2 for 30 minutes, stirring from time to time.

  3. Remove the nuts from the oven and toss with the salt. Allow to cool completely.

  4. These nuts can be stored in an airtight container for up to 2 weeks.
