Raw Vegetable with
Yellow Bean Sauce Recipe

500 g/1
lb vegetables of your choice
-
1 large red
chili, sliced lengthways, to
decorate
Yellow bean sauce:
-
125 ml/4 fl oz yellow bean sauce
-
1/2 onion, chopped
-
1 tablespoon tamarind water
-
200 ml/7 fl oz
coconut milk
-
200 ml/7 fl oz water
-
2 eggs
-
3 tablespoons sugar
-
1 tablespoon soy sauce
Method:
-
Chop the raw vegetables into bite-sized
pieces.
-
To make the sauce, blend the yellow
bean sauce and the onion in a food processor
or blender and transfer to a saucepan.
-
Add
the remaining sauce ingredients and bring
gradually to the boil, stirring. Remove from
the heat and pour into a bowl.

Decorate the
sauce with the sliced chili and serve warm,
with the vegetables.
