Drinks and Finger Food Recipes - Spicy Sausage Rolls Recipe

Ingredients

Makes 50

  • 750 g/1 1/2 lb good quality sausage meat

  • 1 1/2 tablespoons hot pepper sauce

  • 3 tablespoons snipped chives

  • 500 g/1 lb puff pastry

  • 1 egg yolk, beaten

  • caraway seeds, for sprinkling


Method:

  1. Put the sausage meat, hot pepper sauce and snipped chives in a bowl and mix together well.

  2. Divide the pastry in half and roll out each piece to form a rectangle measuring 50 x 12 cm/20 x 5 inches.

  3. Divide the sausage meat mixture in half and form a long sausage on each pastry strip, arranging it to one side.

  4. Dampen the long edge of pastry with a little egg yolk and fold the pastry over to enclose the sausage meat.

  5. Brush the rolls with the beaten egg yolk and sprinkle with caraway seeds. Cut each roll into 25 equal pieces and arrange on baking sheets.

  6. Bake in a preheated oven, 220°C (425°F), Gas Mark 7, for 20 minutes.
