Drinks and Finger Food Recipes - Taramasalata Recipe

Ingredients

Serves 4

  • 75 g/3 oz fresh white bread

  • 2 tablespoons milk

  • 125 g/4 oz smoked cod's roe, skinned

  • 1 large garlic clove, crushed

  • 125 ml/4 f1 oz olive oil

  • 2 tablespoons lemon juice

  • Kalamata olives, to garnish

  • pitta bread, to serve


Method:

  1. Trim the crusts from the bread and soak the bread slices in the milk for about 15 minutes.

  2. Remove the bread slices and squeeze them as dry as possible. Mash the bread with the smoked cod's roe and crushed garlic.

  3. Put the mixture into a food processor or blender and gradually add the olive oil, a little at a time, blending well after each addition. Add the lemon juice and blend until smooth.

  4. Turn the taramasalata into a bowl, cover and chill in the refrigerator for at least 1 hour.

  5. Garnish with olives and serve with warm pitta bread.
