Drinks and Finger Food Recipes - Walnut and Gorgonzola Chicory Recipe

Ingredients

Serves 8-10

  • 2 chicory heads

  • 125 g/4 oz Gorgonzola cheese, cubed

  • 50 g/2 oz walnuts, roughly chopped

  • 4 tablespoons crème fraiche

  • flat leaf parsley, to garnish


Method:

  1. Remove the leaves from the chicory stalks, discarding any blemished leaves.

  2. Stir together the cheese, walnuts and crème fraiche. Spoon the cheese mixture on to the chicory leaves, dividing it between them.

  3. Arrange on a serving platter and garnish with flat leaf parsley.
