2 chicory
heads

125 g/4 oz Gorgonzola cheese, cubed

50 g/2
oz walnuts, roughly chopped
-
4 tablespoons
crème fraiche
-
flat leaf parsley, to garnish
Method:
-
Remove the leaves from the chicory stalks,
discarding any blemished leaves.
-
Stir
together the cheese, walnuts and crème
fraiche. Spoon the cheese mixture on to the
chicory leaves, dividing it between them.
-
Arrange on a serving platter and garnish
with flat leaf parsley.
