Black Bean Sauce Recipe

Ingredients

Serve 4

  • 3 tablespoons salted black beans

  • 2 tablespoons oil

  • 2 spring onions, chopped

  • 2.5 cm/1 inch piece fresh root ginger, chopped

  • 1 small red pepper, cored, deseeded and chopped

  • 2 celery sticks, chopped

  • 2 tablespoons light soy sauce

  • 2 tablespoons dry sherry

  • 4 x 150 g/5 oz cod or haddock cutlets

  • shredded spring onion, to garnish

Method:

  1. Soak the black beans in warm water for 10 minutes to remove some of the saltiness. Drain thoroughly.

  2. Heat the oil in a preheated wok or deep frying pan. Add the spring onions, ginger, red pepper and celery and stir-fry for 1 minute. Stir in the soy sauce and sherry.

  3. Place the fish on top of the vegetables and simmer for about 5-10 minutes, depending on the thickness of the fish, until almost tender.

  4. Spoon over the black beans and cook for 2 minutes. Arrange the fish on a warmed serving dish and spoon the sauce over. Serve hot, garnished with the shredded spring onion.
