Fish and Seafood Recipes - Fresh Tuna with Anchovies and Mushrooms Recipe

Ingredients

Serve 4

  • 4-6 tablespoons oil

  • 2-3 garlic cloves, crushed

  • 1 large onion, finely chopped

  • 150 g/5 oz button mushrooms, quartered or thickly sliced

  • 6-8 anchovy fillets, chopped

  • 2 tablespoons chopped parsley

  • 1 tablespoon plain flour

  • 300 ml/10fl oz dry white wine

  • pinch of nutmeg

  • 4 x 175 g/6 oz tuna steaks, about 1 cm/1/2 inch thick pepper


Method:

  1. Heat the oil in a pan. Add the garlic and onion and fry over a low heat until soft and lightly browned.

  2. Add the mushrooms and cook for 2-3 minutes, then add the anchovies, parsley and flour. Mix together well.

  3. Stir in the wine, bring to the boil, stirring constantly, then simmer gently for 5-7 minutes.

  4. Season to taste with pepper and a pinch of nutmeg. There should be no need to add salt because the anchovies are salty.

  5. Place the tuna steaks in an oven-to-table dish and pour over the sauce. Cover with a lid or foil and cook in a preheated oven, 190°C (375°F), Gas Mark 5, for 40-45 minutes. Serve hot.
