Fish and Seafood Recipes - Ginger and Spring Onion Crab Recipe

Ingredients

Serve 2-4

  • 2 tablespoons sherry

  • 1 tablespoon Fish Stock or water

  • 2 tablespoons corn flour

  • 1 large cooked crab, chopped into serving pieces, with claws and legs cracked open

  • 3 tablespoons vegetable oil

  • 4 slices of fresh root ginger, finely chopped

  • 4 spring onions, finely chopped

  • 1 teaspoon salt

  • 1 tablespoon soy sauce

  • 2 teaspoons sugar


Method:

  1. Mix 1 tablespoon of the sherry with the stock or water and corn flour. Pour over the crab and leave to marinate for a few minutes.

  2. Heat the oil in a preheated wok or frying pan until it is very hot. Add the crab and fry briskly for about 1 minute, turning the pieces in the oil.

  3. Add the ginger, spring onions, salt, soy sauce, sugar and the remaining sherry. Cook, stirring constantly, for about 5 minutes.

  4. Add a little water if the mixture becomes very dry. Serve immediately.
