Onion Crab Recipe

tablespoons sherry

1 tablespoon
Fish Stock or water

2 tablespoons
corn flour
-
1 large cooked
crab, chopped into serving pieces, with
claws and legs cracked open

3
tablespoons vegetable oil
-
4
slices of fresh root ginger, finely chopped

4
spring onions, finely chopped

1
teaspoon salt
-
1
tablespoon soy sauce
-
2
teaspoons sugar
Method:

Mix 1
tablespoon
of the sherry with the stock or water and corn flour.
Pour over the
crab and leave to marinate for a few minutes.

Heat the
oil in a preheated wok or frying pan until it is very
hot. Add the crab and fry briskly for about 1 minute,
turning the pieces in the oil.

Add the ginger, spring
onions, salt, soy sauce, sugar and the remaining sherry.
Cook, stirring constantly, for about 5 minutes.

Add a
little water if the mixture becomes very dry. Serve
immediately.
