Fish and Seafood Recipes - Griddled Tuna with Shallot Jus Recipe

Ingredients

Serve 4

  • 4 x 100 g/3 1/2 oz tuna steaks

  • flat leaf parsley sprigs, to garnish 

Sauce:

  • 4 shallots, finely chopped

  • 300 ml/1/2 pint red wine

  • 150 ml/1/4 pint Marsala

  • salt and pepper


Method:

  1. Preheat a griddle pan or nonstick frying pan until it is very hot.

  2. Cook the tuna steaks, two at a time, for 3 minutes on each side. Remove from the pan and keep warm.

  3. To make the sauce, mix the shallots, wine and Marsala in a saucepan, season to taste with salt and pepper and boil rapidly until reduced by half.

  4. Return the tuna steaks to the pan, add the shallot jus and simmer for 2 minutes.

  5. Garnish with the parsley and serve with mashed potatoes and lime wedges.
